An Evening of Fresh Flavor
A summer dinner rooted in intentional ingredients

This summer, we had the opportunity to create an al fresco culinary experience at Ashery Lane Farm for Uncommon Leaders Live, bringing guests together for an evening centered on connection, conversation and really good food. The setting called for a menu that felt just as fresh as the summer evening itself.
For this event, our chef team built a menu around thoughtfully selected, clean ingredients, with an emphasis on fresh produce, vibrant herbs and simple preparations that allowed each ingredient to shine.

The evening began with colorful passed bites that immediately set the tone. Watermelon was paired with whipped feta and pistachio, herb-crusted grass-fed beef was finished with whole-grain mustard remoulade, and crisp cucumber cups were filled with melon “caviar” and mint syrup.

From there, guests settled in for dinner, beginning with a spring pea and mint soup before fresh, family-style salads made their way around the table. Peppery arugula with Parmesan, pine nuts and lemon vinaigrette sat alongside heirloom tomatoes, creamy burrata, fresh basil and salsa verde.
It was fresh, colorful and nourishing; as importantly, it was delicious.

Rather than every element arriving individually plated, salads, vegetables and sides were placed on the table for guests to pass, share and enjoy together. It created an experience that felt relaxed and communal while still maintaining the elevated feel of the evening.
Entrées included ribeye with fresh herbs, organic roasted half chicken with grilled lemon and thyme, and a plant-forward cauliflower steak with red quinoa, cilantro pesto and coconut cauliflower purée. The table was filled out with asparagus and fresh herbs, roasted zucchini, yellow squash, carrots and peppers tossed in oregano vinaigrette, and creamy rosemary potato gratin.
The result was a table overflowing with color and abundance, showing that fresh, wholesome ingredients don’t need much fuss to create something memorable.
That same philosophy extended beyond the plate.

We wanted the non-alcoholic drinks to feel every bit as intentional and celebratory as a great cocktail. Instead of treating mocktails as an afterthought, fresh juices, herbs, teas, spices and beautiful garnishes became part of the experience.

Guests were welcomed with a refreshing blend of cucumber juice, elderflower syrup, fresh lime and soda water, finished with a cucumber ribbon. Throughout the evening, additional mocktails offered more fresh, flavorful options, proving that a drink doesn’t need alcohol to feel special.
With vibrant ingredients, thoughtful presentation and unexpected flavor combinations, each mocktail brought the fun of a beautifully crafted cocktail while keeping fresh, ingredient-forward flavors at the center.

The evening ended with coconut cream panna cotta and fresh berries, followed by French-style coffee service, a light finish to a menu that felt cohesive from the first passed bite to the last spoonful.

For us, this dinner was a reminder that “healthy” food doesn’t have to mean a plate of restrictions or compromises. It can mean seasonal vegetables at their peak, quality proteins, fresh herbs, bright citrus, naturally vibrant juices and ingredients chosen with intention.
And when you bring all of that together around a beautiful table, outside on a June evening?
Eating well can feel a whole lot like celebrating.
